fugly coffee buttercream icing :( |
The coffee and chocolate flavour were pretty intense in these cupcakes! Unfortunately, I didn't have time to take better glamour shots at the office yesterday... I made the coffee butter cream in the morning and took it to work to pipe in case they smudge all over during transport, except I got busy and left the buttercream in the fridge after I got to work and it hardened up... by the time I got back into the kitchen to serve them, I had to microwave the icing a little to work it and the piping tip was pretty useless so I took it out - the result was a bit messy but I hope the taste wasn't compromised! (I imagined nicely piped spirals grrr). Grant came over and requested a birthday cake order to this flavour for September, he said the mocha cupcakes were "beautiful" (a few weeks ago I heard him complaining about cake overload!) - guess I'll be keeping this recipe! Even though I'll be down scaling soon after I reach my goal, it's nice to have people still making cake orders and putting the money towards my sugar4water campaign :)

I also remade the Almond and Pear cake with Passionfruit glaze, now that I'm more confident about my butter creaming process it made a big difference with the "cake growth", and I used the canned pears as instructed in the original recipe instead of the fresh ones I used
last time. I can't really compare since I didn't get to taste the first attempt, but I like the almondy taste of this cake, not too sweet to eat for breakfast :)
I think I'm really closing the gap towards US$5000!! (might even be tonight after I get the latest numbers together!!!!!!!!!!!!!!!!!!!!!!!)
